We are almost there! We have been eliminating foods and adding in new ones. Sad to say, but my son's diet has had a lot of french fries in it lately. But, he is doing better than I thought.
Today, he had his last Arby's sandwich on a real bun. The only food left to eliminate is REAL chicken nuggets. I chose to eliminate this one last because he was eating them almost every day for lunch. So, I started by not giving them to him every day--just randomly so that if all else fails I will be able to give him something different for lunch. And, I figure they have less gluten than bread products. We are still in the process of trying to find a substitute. So, we will try a few more recipes of homemade nuggets, and if that doesn't work I will either be searching Nashville or Memphis for GFCF nuggets--or even worse--ordering them online for a ridiculous price. But, the plan is to be completely GFCF by Monday. WISH ME LUCK! I'M GONNA NEED IT!!!!
Also, today when I was at the OB/GYN, I was leaving the exam room and picked up the book I was reading: Special Diets for Special Kids by Lisa Lewis, PhD. She asked me how much I had read so far. Then she told me that it is a really interesting book, and I should definately try the diet with my son. Apparently she is familiar with it and thinks it has some validity. HMMMMM. Great to know!
